over here in the states the go to shot gun is the 500 mossberg or the 870 rem and I think It leans a little heavy to the 500 because Remington has not been doing much the last few years I like both and can say I have both but I lean to the 870 rem it is a very smooth action.
I was wondering what are the go to shot guns for you guys I will say as a country here we tend to think of you guys as rifle shooters going back to ww1 you guys had some of the best shooters.
We do hunt a lot of deer with the shot gun and in the eastern part of the country you will see the shot gun used for most type of hunting.

I only have one, my trusty old Sportco model 80, 2 3/4" 12g.

Bought him at Kmart for $40, in a bygone era, back before Australia became Nannystan, where the mere thought of a shotgun with more than 2 rounds terrifies the unedified.

Had a mossberg 500 pre ‘96 and it’ was so reliable you could stuff a dead tom cat in the magazine and it’d still cycle but it was a horrible fit on me so I traded it in on a Remington 870 SPS camo. I could shoot clays all day with that gun but it was the one I had to hand in and I’ll never forgive or forget that theft.
These days my go to is a Mossberg k95 bolt action 12g and also have a Mossberg bolt action .410 that I’ve had since I was 15 yo and a 2 shot 12g Remo “Popular” from about 1923 in good order.
I have a soft spot for bolt shotties
There's still a few of Wile. E Coyote's ideas that I haven't tried yet.

Pre 1996. Maybe we could say that our go to shotgun was a winny pump . But now we are experimenting with somewhat unreliable European imports and we are far from being able to settle on a shotgun that perfectly meets the needs of most people

Mine would have to be the Miroku O/U 12g with the steel shot proof barrels, cos it's the only one in the safe that belongs to me.
Nevertheless,,,,,,,,, its still a nice gun.

Old Spanish VG Bentley 28” SxS, handled the old Aussie made Winchester 3” super X magnums like an absolute champ.

My old man would have said his 16” Boito SxS

Nothing wrong with the Churchill. I've had quite a few sessions with the 912. Shoots ok.

Haven't seen one for years. Ones I did see were rough, required a lot of work to get the lever action slick. These days the pumpkin on a fence slayers are going for the gas operated push button guns.

Adler is old news. As they fell apart there were some unintended benefits and features that made them very attractive. However as Mc chub wrote the push button gas operated Beneli M4 knockoffs are way ahead in quality and function.

Prior to 1996 my go to was a Spas-12, which had the ability to run semi-auto or switch to pump action as required. I had a thing for high capacity shotguns and also got a USAS-12 shotgun which cleavers was bringing in around 1994. That had a 20shot drum and 2x stick mags, semi auto. It would sit and rock nicely as you pulled the tigger 2-3 x per second. After that a bentley pump got a lot of use. Once we lost all them I ran a SXS boito( south American brand) which is very popular here. A 10ga SXS Zabala hermanos, massive thing with 32" barrels. Also got a 12ga Hatsan Escort for a short while in the early 2010's with the 3.5" inch chambers, was always frothing at the mouth over super heavy paylods in the 10ga and the 3.5" 12ga. The 10ga could run almost a 3 ounce shotload of buckshot with careful stacking. 5.5 ounces downrange with two pulls of the tigger. Then I got out of shotguns altogether and these days a single shot 410 is all I have owned.

yeah mate I couldnt hit a clay or bird to save myself but loved big buckshot charges on ground targets. Blokes in the US and UK at the time were boring out regular 10ga doubles such as the Greylags and Aya Matadors to a true 8 guage. The brits had 8 gauge hulls, also the yanks could turn the step section off the industrial 8gauge hulls you used to be able to buy for shooting kiln slag. The only problem was with the reduced wall thickness of the gun the resultant 8 gauge double would end up same or less payload than the original 10ga donor. 2.75 ounces was about the limit per barrel. I sold my last large shotgun about 10 years ago, was considering re-ignititing the passion pre covid but powder/components situation made it unworkable.

My go to for the field would be my Beretta 486 Parallelo but it has never seen a paddock as all my field shooting is done with a rifle. I use a Beretta 682 Gold E Xtrap for down the line but that has not seen the light of day for a couple of years unfortunately.
I like quality guns and the crap that has been dumped on us over the last 10 or so years is unbelievable. The Adler was a horrible gun that was rough in every way with a lever throw a mile long. Some of the latest push button guns are not bad but they are all made I Turkey to a fairly standard. I'm sure most consumers would pay a little more for a quality gun built to last like the ones they are copied from. The ATA under and over guns and some Churchill's are decent and well priced.

For me it was cheap n cheerful: Adler B220 straight pull.
Con: not an over/under
Pro: Easier to resist my sporting shooter mates asking me to come out and try competition, so my wallet remains full (er).
