One of the best shooters I ever owned was a .243. From rabbits to deer it would dispatch them all with quick, ethical results.
The winning factor with the .243 is its ability to load a large range of bullets, more today than when I had my .243.
I love the .223 but it isn't as strong as the .243 and you can load the latter to over 3000fps in some bullet weights.
There is one other thing to think about, the new .243WSSM (Winchester Super Short Magnum) which we can get in an AR-15 (the .243 requires the longer action of the AR-10).
If you are taking real long shots you can also try the .25-06 (.25 caliber in a .30-06 cartridge). A lot of Sheep hunters (300+ meter shots) like this one time wildcat round. Bullets and loading equipment as well as commercial ammunition is readily available here--would imagine it would be there too given the large area of long distance shots.
