Best Tasting Deer in Australia?

I'm interested to hear from others about what their personal favourite deer species is for venison in Australia as I am new to hunting in Victoria and haven't tried looking for any particular deer for venison yet.

I've only eaten fallow, I rate it highly.

I like venison to taste like venison, ie: game. For that I find Fallow, although succulent and sweet, to be a little too mild and lacking presence so I would prefer Red, well hung. Alternative is Sambar, which is easier to obtain.

I like deer meat, it just doesn't like me.
After eating deer meat, I find that the flatulence puts anyone around me off.
So the wife has banned deer meat :(
But i still harvest it and donate it.
The back straps, marinated, make ausome schnitzels.

Thanks for your responses guys, guess I'll be on the lookout mainly for fallows and reds then.

I've eaten Rusa a fair bit, depends what it's been eating how good it tastes (sends they get into lantana around here as some tasteiffy). I've eaten chital once, that was in another world I thought, in a good way
