I'm interested to hear from others about what their personal favourite deer species is for venison in Australia as I am new to hunting in Victoria and haven't tried looking for any particular deer for venison yet.

I like venison to taste like venison, ie: game. For that I find Fallow, although succulent and sweet, to be a little too mild and lacking presence so I would prefer Red, well hung. Alternative is Sambar, which is easier to obtain.
I like deer meat, it just doesn't like me. After eating deer meat, I find that the flatulence puts anyone around me off. So the wife has banned deer meat But i still harvest it and donate it. The back straps, marinated, make ausome schnitzels.
I've eaten Rusa a fair bit, depends what it's been eating how good it tastes (sends they get into lantana around here as some tasteiffy). I've eaten chital once, that was in another world I thought, in a good way
