Game hunting and large prey. Deer stalking, hunting with hounds. Boar, pigs etc., large prey, culling, hunting large feral animals.

I'm interested to hear from others about what their personal favourite deer species is for venison in Australia as I am new to hunting in Victoria and haven't tried looking for any particular deer for venison yet.

Mate I have only ever had Chital. Delicious.
Edit: oh and I had Rusa a few years ago too but only ever the once.

of the sambar hog red and fallow deer I have chomped on the fallow wins by far .

I like venison to taste like venison, ie: game. For that I find Fallow, although succulent and sweet, to be a little too mild and lacking presence so I would prefer Red, well hung. Alternative is Sambar, which is easier to obtain.

I like deer meat, it just doesn't like me.
After eating deer meat, I find that the flatulence puts anyone around me off. :crazy:
So the wife has banned deer meat :(
But i still harvest it and donate it.
The back straps, marinated, make ausome schnitzels. :thumbsup:

I've eaten Rusa a fair bit, depends what it's been eating how good it tastes (sends they get into lantana around here as some tasteiffy). I've eaten chital once, that was in another world I thought, in a good way

I hear from game chefs, they prefer chittal Shame the things are so rare in NSW.

A good question,

deer like sambar, red, rusa and elk have a coarser grained meat ( i have shot elk here in SA that had escaped from a deer farm if you can believe it!!) whereas fallow is a finer grained meat as is chital.

Of all deer i have harvested chital would be my pick. More importantly is the condition of the animal at the time of shooting it and the care taken in preparing the carcass for the table. Personally deer that i shoot in late spring / early summer are in prime condition and make the best eating .
