Hi.

As a noobie, while I would love to get out with someone experienced options are a little limited in that department atm. Are there any books on hunting basics and also preping cooking wild game. i.e the definitive guide to Australian hunting and cooking wild game sounds good :lol:

I really don't know where to start when it comes to cooking wild food which mainly springs from not knowing if something is good to cook or not. Like what if it was sick? have I bleed it properly? really just don't know anything about meat all I know at this point is buy it in the shops and it's good :unknown:

I saw a video just last week about determining if game meat you've taken is viable to consume - I didn't save it though, if I find it I'll post it here.

I wish my brain would work properly. There IS a well known book covering such things but I just CAN'T remember its name !

Buy a copy of Mrs Beetons book All About Cookery, any edition between 1860 and 1900 will have recipes for any game species you want, short of 'roo and crocodile.

look at steven rinella he has a few cook books does some on his show he is very much about eating what you hunt

Highly recommend "The Game Butcher - Wild about meat" by Darran Meates - out of NZ.

I have the book and DVD - this guys is a professional butcher specialising in game meats - excellent book indeed.

Theres a few good books from nz, not sure how relevant they would be for aussie. Stalking the seasons is almost like the bible over here...

Even though they’re written for American game, I would recommend some of Steven Rinella’s books, namely the Meateater Cookbook and the Complete Guide to Hunting, Butchering and Cooking Wild Game (Pt. 1 & 2). They’re very comprehensive and detailed and like I said, they are written for the American scene but are translatable to Aussie hunting

I have one called "Gut it, cut it, cook it". I've found it pretty good, stain resistant paper (plastic) and lay flat binding for when your butchering. It's north American and it has a section on inspecting meat for parasites which isn't overly relevant.

Also Wild Meat.Author:Ross O"Meara.
Bit exxy,but both Aus and good read.

after watching steven rinella i never toss a shank or kneck roast when cooked low and slow they are great
