I'd be hoping to concentrate on pest species for a couple days and then perhaps take a deer on the final day. Rabbits would be particularly handy for eating

Game species may be hunted, but only during the open season. Sixteen State Game Reserves are available for quail hunting and six for Hog Deer hunting. Pest animals may not be hunted at any time, unless specifically authorised by DELWP.

If you're only hunting deer then just get your game licence and hunt them in deer hunting habitat.
It only gets confusing if you want to hunt all available species in an area. Deer hunting area boundaries don't always follow the state forest boundaries.

I think I'll have to find a local to hunt with before I head over. Might be easier and I sure as hell don't wanna get into strife over a bit of confusion

I think you mean Permit.
And to that I will say: "yet"...
