I have a pair of Nikon 8x40 Action Extreme binoculars which I can't fault and am perfectly happy with.
Resolution and contrast is excellent and they are a good compromise on weight, bulk and performance.
There is new pair on US ebay buy it now at the moment which will get here for about $260 AU. The Australian price is much higher.

These binoculars are Porro prism type.
Roof prism type binoculars seem to be more popular these days mainly due to compactness but to get optical performance comparable to good porro binoculars the price has to be much higher.

Plus one for Nikon optics, great performance for the price but don't confuse them with Nikko Sterling.

I bought a pair of Nikon Monarch 5 10x42 on eBay at the end of last year for $295.

The price has gone up, but you can still get them for $360 with the current 20% off ebay promo. The Monarch 5s are legitimately good. Most popular butterfly/bird watching binoculars in the world apparently.
