It's a bit leaner than lamb so slow roast with a bit of water is the way to go.
Leave the billy's (they aren't called stinkies for nothing) try and get a young one and take the back legs off, put in a camp oven, on a trivet (keeps it off the bottom of the oven), rosemary, garlic, olive oil, a bit of water, cook for about two to three hours, not too many coals or it will burn, add more water as needed, shes cooked when you can break it apart with your fingers.
Tender as, yum, I'm hungry now
Better than lamb in my humble opinion.
