How do you cook your fish?

Post by AusC » 21 Jul 2014, 6:36 pm

Dunno about the rest of you blokes, I can get a fish out of the water but after that I'm a bit out of my element. If it's not a stew someone else has to cook it

I've been instructed by the misses to bring home some fish on this weekends trip. They'll be cooked as requested, I've just gotta bring em.

How's everyone else do it?

I just gut them , scale them and then wrap them in Alfoil with lemon and some herbs and spices and then whack the whole thing on the BBQ or in the oven for 5mins or 10 mins each side if it's a big fish. It's my favourite way to cook fish but if the fish is too big for this method then I fillet it and beer batter it :) I do love to catch my own fish :)

Depends on the fish, eg. Barra is awesome in the oven, especially Whole Barra uncovered with Skin on. Just slice it 3 times on either side & sprinkle salt, pepper & some lemon juice. If it's skinned, sprinkle as above & wrap in foil with no cuts.
If it's Bream/Snapper etc,...Pan fired is the best way with skin on in butter u can even roll in flour if you wish.
Flathead, rolled in bread crumbs & pan fried.

You can't beat pan fried for most fish, some fish need bleeding too.

I like it rubbed down with a little oil and lightly seasoned then onto a hot (bbq) grill. don't turn it too many times, get it a bit browned then turn the heat down, be careful not to overcook it.

Whole fried fish is my favourite.

A couple of deep scores down each side, a light salt & pepper batter and fry the whole sucker in a wok of oil as hot as you can get it.

No good for trout, but perch would do nicely.

Any flavour you like + foil + BBQ.

A couple of slices of lemon is nice and simple for me.

Chilli, spring onion and soy is another.

Replace BBQ with stone by the campfire as well of course.

Dunno if I can claim too much skill over just plonking it in a wok full of oil

Fillet cut into small pieces, battered and deep fried. ...squeeze of lemon.... you'll only stop eating when the plate is empty.
