Sick of baked beans camping...

Post by cooker » 13 Dec 2013, 5:05 pm

Hi all,

I'm not much of a cook, but I can tell ya I've about had my fill off baked beans from a can when camping.

I don't go camping with much cooking gear so can't do anything too fancy, just limited to a campfire and a hot plate.

Looking for some ideas for better meals without much cooking gear.

I'm not much at camp cooking but I have a mate who does an incredible roast on the spit, veggies in the camp oven, always a fantastic feed.

Get a cast iron camp oven and a couple of camping cook books. Most of the recipes are simple and only have a few ingredients. Or sign up as an assistant Scout leader with your local troop and you'll learn pretty fast - you might even learn how to cook bacon and eggs in a brown paper bag!

Ploughman's platter.

Not hot, but if you pick up a dozen different meats/cheats/breads and bits and pieces from the deli it makes a meal fit for a king.

In summer, oh yeah.

In the colder months that gets old too though I reckon. Need some hot meat on a cold night out!

One of my favorites in the winter is chicken, leak and potato soup slow cooked in a camp oven and eaten with a fresh pull-apart loaf......wonder if there's any chook in the freezer.......

Yeah, doesn't get much easier than a billy of home made soup over the fire.

Chicken soup(mainly from cans): take 500grams of frozen chopped breast meat(freeze before you go camping and it will generally still be cold on day three if kept in an esky) put in large billy, tip in 1 litre of campbells tetra packed chicken stock and one 440 gram can of creamed corn- stir and bring to boil, simmer for twenty five minutes.

Chicken soup is a good entree to the main course:

Scrubbed spuds in jackets in the coals for about an hour then buttered(don't get them too hot- experiment) eaten with tinned peas(take lid half way around and sit near in coals to warm eaten with a tinned Fray Bentos steak and kidney pie cooked in the camp oven(ususlly takes about 15 minutes longer than at home).

Once you take out the steak and kidney pie put a self saucing pudding in the camp oven(we carry a medium saucepan without a handle) just for this purpose, serve with tetra packed thickened cream.

I also make a mean tuna mornay consisting of a large tin of tuna, a tetra pack of cream, 500 grams of spiral pasta, packet of french onion soup and two teaspoons of curry powder( combine all in the dutch oven and just let it cook stirring once in 45 minutes, don't let the mix set in the oven boil rinse and oil).

If it is just me it is beans and sausages for most meals.

+1 for a cast iron camp oven. You can make just about everything in them

You can do some decent stuff with just a roll of foil.

I often do pre-prepared chicken satay skewers and just wrap them in foil, and leave them on the side of the fire.

Don't need a hot plate or anything else to cook 'em.

Another vote for the camp oven but for something that's canned and tasty take a can of stag chilli and add a can of ravioli then heat. Serves two hungry hunters

Sounds "interesting" but its a good combo

Foil is great, it saves on washing up.
Baked potato and veges are easily done this way as well.

I use plastic drink bottles for ice in the esky, when they defrost you have more drinking water.

Camp fire baked potatos are the bomb.

Spoon of salt on the foil to dry out the skin, tater on top, wrap it up, next to the fire. Beauty!

All time favourite is twisties! Make up a damper dough and wrap it around a stick about 20mm thick, keep rotating it over the flame then when cooked pull it off the stick and fill with butter and golden syrup. Beats marshmallows hands down!

I dunno what the obsession with doing marshmallows over the fire is.
