Homemade Bread

Anyone else dabble in baking their own bread, sourdough or otherwise?

It's taken me a while to get consistent results but I'm starting to get my sourdough technique down pat to knock out a couple of these bad boys every now and then. I've combined a few lots of instructions/recipes to tailor make it for my own likes and conditions - these are really not sour at all, so much so I'm going to change my culture to try and get it a bit more sour. The discard I've taken to keeping to make discard english muffins that are almost worth doing just on their own without the bread, one of the few recipes I've tried that are as good or better than expected.

Not much better than home made fresh crusty bread, especially wrapped around a bit of home cured ham, a home grown tomato and other 'bits' that help make a sandwich all the more tasty (heavy doorstops need not apply)

Yes, the smell, the joy of fresh warm bread with butter (not that yellow tripe passed off as buttery spread), yum.
