300 YARD BUNNY BURGERS...Standing over this bunny, according to my rangefinder its 301 yds to the car in the backround where i launched the missile from...
& that red splotch in the forground it whats left of a 20 cal 32 grain Varmageddon...
I was playing for a head shot so was pretty stoked...!!...Yay to me...!!..i did a little dance when i saw it fell over in the scope..
....
This is as it fell...it was raining/drizzle so i left the rifle in the car...

This is a story about what happened to the bunny...
So upon my return from my last bunny jaunt, i had a fridge/freezer circumb to the Corona Virus, & as such had an evening spent juggling eskies & repacking working freezer to maximise space.
It also meant there was no room for some recently sniped hoppy creatures, so i went about preparing a few different dishes to minimise the bordum of eating bunny for more days than not in a week...
Not great considering i had 8-10 bunnies to freeze...
So i decided as well as the usual go-to Southern Fried Bunny, id knock up some mince patties again.
Ive done it before & was surprised how good they are (i thought they'd be a one-off ordinary to not-so-nice dish)
Anyway...i saw that pommy butcher on Utube with his spring loaded patty press & decided ill have to come up with something shape the patties...
I didnt feel like cutting & sanding a slice of stormwater pipe, so i dug an old round take-away rice/soup container & went to work on it with a knife & scissors.

So that sorted, i boned out the bunnies while a little 150gm block of pork fat thawed out...
Then i diced it all up ready for the mashing...
I added the kidneys in there...no point wasting those tasty little globs of goodness...!!

i pulled out the old hand crank mincer as only had about 1.5kg to do & cant hear the music with the ALDI grinder sounding like its mincing through a whole cow...
Clamped it to the table & got one arm cranking while the other fed handfulls into the hopper...

As can see in the pic...hours earlier id already diced a red onion & gave that some low heat in a pan with some oil & cooled it in the fridge...
Also went out to the garden & snapped off a couple of feet of rosemary stalks & finely chopped the leaves...
All these along with some breadcrumbs, a heap of fresh cracked black peppee & cracked sea salt were tossed in & skwished about until evenly mixed.
Then came patty moulding & shaping...
Well the spoon that came with my rice cooker god knows how long ago finally got its first use--i knew i kept it for something...
I really pushed the meat in there--i didnt want half-arsed fall apart empty let-downs--i wanted some patties...

As anticipated i had some issues with the mince sticking to the container & so used a small layer of breadcrumbs to combat that.

So a sprinkle of crumbs over them, then into the fridge so they kind of set on the patties...
Then out on bench for a bit while prepped the vegies, & into the pan...
I was getting all excited at this point cos they looked great...!!!

They are a little on the cooked side of perfect but look a lot darker in the pic for some reason...the phone camera & flash i guess...
Anyway...by the time i got to eating, id already lost a good deal of one patty while serving up..
i was starvin by then...&.they were great...!!
(Excuse my cracked black pepper addiction...i get it from Grandma--she was worse than me, but im getting there...
)

Heres another pic part way through dinner...i took it to try & show how they havent really lost any volume like what happens with the mince thats grown on those foam trays in the supermarket, or even worse, the pre-made ones that halve in volume.
This is all nice sweet chunky bunny meat...i say chunky because i only ground it once, but it was still fine...

The reason the plate is a mess is because i was a good boy & didnt have bread to mop up...
And the pea...well that fell on the floor & the patties were so dam good, that rescuing a solitary pea wasnt something i was prepared to waste time on...!!..& for health & safety reasons, you never eat anything thats been on the floor of a bachelor's lounge floor for more than 10 mins...!!!...

Well in summary...they were great...somple ingredients, relatively quick & easy to do, especially if you just bone out the saddles & back legs where the bulk of meat is.
Rosemary is a must i rekon...!!...i tried a bit of cooked mince on its own & it wasnt great...but the rosemary really sets it off & compliments the sweet bunny flavour.
I also tried some with some with sweet paprika & cayenne pepper sprinkled in the mince mix & didnt use enough to make a great difference.
The just over 2kg of bone in bunny, i got a good 1.5-ish kg of boned meat, 150 grams of pork fat ended up making atleast 12 good sized patties that when well cooked were a solid 3.5" in diameter & at least a full inch thick...!!
I had three, but 2 of these patties would prob do the average to large eater for a meal...
