Benchrest is the Formula 1 of target shooting. Latest hi-tech gear, cutting edge type stuff. Big $$$. There is a benchrest event that you can have a go at with standard hunting rifles, Fly Shooting. Check out their website, http://www.500mflyshooter.com.au. While you will still see a lot of high-end gear, you can start off with standard gear.
SSAA Rifle Metallic Silhouette is a challenging target discipline that can be shot with standard "out-of-the-box" rifles.
SSAA run a Field Rifle discipline also
F-class Full-bore is another one that may be worth a look at.
