What does cockatoo taste like

Post by straightshooter » 08 Jul 2018, 12:30 pm

Has anybody on the forum ever eaten cockatoo?
If you actually have, how was it cooked?
What did it taste like?
Is it similar in any way to chicken, turkey, duck or goose?

But ive never tasted such birds.

Don't think I've ever tasted cockie, I've certainly never shot one.
Galahs though I shot heaps of as a kid. I just cut the breasts out and fried them like any other steak.
I haven't had turkey, duck or goose since I was a kid, and don't remember what they taste like, except that I don't like duck.
I'd put galah as closer to beef than anything else I've tried.
I don't use anything for cooking meat as I like the meat itself, but lightly salting both sides of the steak brings out the fluids nicely, without becoming salty to taste.

Good catch :-)
I mean that if I'm going to bother eating something I want to be able to taste it, instead of tasting nothing but spices and sauces and all the other crap that was invented to make garbage palatable :-)
Just a frying pan, a touch of water to wet it, then drop the salted meat in.

A camp oven 2 cockies 1 onion bit of water a bit of salt slow cook for couple of hours and you have something similar to rabbit
Put cuts across the grain of all the meat 1/2'' apart to the bone or it will taste like Bessa Block

Try gut, pluck and "butterfly" the Cockies, press out flat, rub with a drizzle of Extra virgin olive oil, salt, pepper and garlic to taste.

Place breast side down on a heated BBQ. I usually place a medium sized piece a blue metal rock( scrub to clean) on the breast to keep the cockie flat and grill over medium heat for about 5 minutes, turn & brush with a bit more oil and grill for about 4 minutes (with rock to keep flat).

Serve - Arrange a plate with a nice walnut salad and grilled BBQ Asparagus, glass of Merlot, TOSS the bloody cockie and eat the rock, more flavour and not as chewy.
  Enjoy.

Place Galah in saucepan with 2 rocks, boil until rocks are soft, throw away the galah and eat the rocks.

My ex-wife reckoned it was a bit salty and best with some nuts.

If I was going to try cooking some I'd try breasts cooked sous vide at the same temps and technique you'd use for duck.
If you haven't tried cooking sous vide google "beer cooler sous vide hack", you probably have everything you need already.

As far as I'm aware, cockatoos are protected in all states, although you could likely get a cull permit if they're a problem.

They are protected but if you can prove they are causing damage to your business, you can apparently get a permit to cull within reason.

Reminds me of the bloke who walked in the bar & asked for a dozen double shots of Ardbeg Scotch Whisky...(a pretty ruff Scotch for the average punter).

The bartender lined them all up & the bloke slammed em all down, swishing & gargling each one like it was mouth wash...

The bartender asked him if he was celebrating something & the guy replied "yea, my first head job"...

The bartender said "congrats mate, let me shout you one"...

The guy ssid "nah dont bother, the last twelve didnt get tge taste outa my mouth so one more wont make any difference...

My father ate pink and greys all his life ,he was born in 1904 , laws have changed over the years.he absolutely loved them to eat. I tried them ,but the meat was rubbery and grey looking and i did not like it at all.definately an aquired taste, my mother used to braise them .
