Nice collection.

I've got a m7, but the bolsters are both broken.

I've tried to buy another on eBay but the US sellers that I've tried to buy from so far won't ship to AU.

I'm also a little worried about the potential for customs to decide that they're keeping it for themselves.

G'day on_one_wheel,
Don't worry about Customs, bayonets are exempt from any import restrictions. Knives, on the other hand, do have some. mainly concerned with double edge knives (double edge bayonets like SHV's Swiss M1918 are OK though,) and folding knives, auto opening etc. Keep looking on ebay, one will come up with International shipping one day and don't be afraid to contact a seller and politely ask if they will consider shipping to Oz. I get about half of them agreeing, and I buy at least 2 or more bayonets from the US a month, Cheers.
