What the hell is going on with the sight choice, is this the cool thing to do these days?

It's simply an infomercial targeting a by and large uninformed audience who might buy the monstrosity being presented on an impulsive whim.
It's of necessity different to all the other infomercials that target shooters who believe they are knowledgeable about firearms.

I zero my lever-actions offhand because that's how I shoot them. I zero them first rested off the ute, but then I fine tune the zero shooting offhand to get them spot on.

What point? Lots of people zero offhand if that's how they intend to use the firearm. I make sure the sights get me "on paper" from some sort of rest, it generally only takes one shot to confirm that, then I actually zero it offhand. I can't boresight any of my levers without stripping them, and the only one I would do that with in the field is the Norinco JW21, all the others have too many small parts that will disappear.

Btw,I rarely use a rest for hunting, but I always sight in off one
