I have a 1917 SMLE No. 1 Mk III from Lithgow Small Arms Factory that was sportsier (stock only) and was wondering if I can get a full replacement stock and fittings? and is it worth doing it? the rifles in good nick and matching numbers.

Can you get replacement stocks easily and where?

It can be done, but it's not easy. Stocks were hand-fitted to the actions, then numbered to the action also. It's important to get the correct fit at the "draws" which takes most of the recoil force, and around the trigger guard so that the 2-stage trigger pulls properly. You'll need a few basic woodworking tools to do it properly.
Stock sets for the early SMLE's like yours do occasionally appear on eBay or dealers like Southern Cross Militaria, but are rare. They have a slightly different shape to the later WW2-vintage SMLE's. You'll also need a few parts like a nosecap, spring plunger and probably a barrel band.
Prestigious Wood Stocks in the US make new ones, for about $500 without the parts.
All up it'll cost many hundreds, and at the end of the day it won't be an all-matching numbers rifle.

Not easily, but they can be found usually at gun shows or by ringing around dealers specialising in military rifles. It is worth doing only if you want to restore the rifle as a project, at the end you will have a mis-matched number rifle that will cost close to what you could buy complete. Reproduction stocks are being made but do cost close to genuine parts. I would suggest you start with Tom at T-Bone Gunsmithing.
